I mean farming on ground without any infrastructure, with natural water supply and milenia of optimization is not very profitable

This is not entirely true. You always needed some infrastructure, irrigation canals, fertilizers, roads to deliver the product to the customer, market places… Without the use of pesticides and herbicides the yields are not comparable to hydroponic system.

Hydroponic systems use way less water, could be built close to customers, yield way more than traditional methods, don’t use any herbicides and is less labor intensive.

So, even if initial costs are more than the traditional farming, I can see it being adopted on a larger scale in cities, as time moves on even in rural areas.
